Isomalt Clear Crystals are ideal for making beautiful clear candy decorations for your cakes, candies, and treats! Unlike regular sugar, Isomalt will not crystallize and has a higher resistance to humidity resulting in a clearer finished product.

• Directions: Combine 2 cups Isomalt and ½ Cup distilled hot water in a heavy saucepan over medium heat until dissolved.
• Using a candy thermometer, bring the mixture up to 320F degrees—remove from heat.
• If you want to add color, add liquid or gel color at 280F degrees.
• If you want to add flavor, add liquid flavoring once removed from heat.
• Pour the liquid isomalt mixture into a greased candy mold, silicone mat, or sheet pan.
• Allow to cool and harden completely before handling, about 10 minutes.
• The contents are extremely hot, handled with care, and kept out of reach of children.
• Store in temperatures between 59 – 77 degrees F, and between 20% – 60% relative humidity
